Red Dress Dash

We are ready for Dash!

It was time to tread in red.  My friend who has been the Miss and Miss Teen Illinois International director, Jennifer, escorted me downtown for Chicago's first, “Red Dress Dash,” for the Go Red Campaign through the American Heart Association.

The catered event was held at Daley Plaza. Everywhere you looked there were women, and even men, in red dresses and tennis shoes. Quite the look! Everyone then raced around the plaza in a 50-yard race to the finish. The winner was given both a trophy and a gift card, which he'll use for a girlfriend's upcoming birthday.

It was great to see some of the familiar faces from the American Heart Association and Go Red for Women. And we enjoyed getting a chance to meet the many staff and students from Mercy Hospital who helped organize this race. Mercy has a great cardiology program and during the year they have many different events to help educate everyone about heart health related issues.

One of My Favorite Healthy Recipes


The majority of the meals my family eats are recipes found on the American Heart Association website at heart.org. They have everything you can imagine and they‘re fun to make as a family! This is the recipe to one of my favorites. It’s a South Pacific Shrimp with Southeast Asian seasoning.

You’ll need:

1/3 cup “lite” coconut milk (see Cooking Tips)
2 serrano chiles or jalapeno peppers, preferably red, seeded and minced
1 teaspoon minced fresh ginger
1 clove garlic, minced
2 teaspoons reduced-sodium soy sauce
1/4 cup lime juice
1 tablespoon brown sugar
1 pound medium shrimp (30-40 per pound), peeled and deveined (see Cooking Tips)
1 teaspoon extra-virgin olive oil
1/2 cup diced seeded tomato
4 cups baby spinach

Start by combining the coconut milk, chiles, ginger, garlic, soy sauce, lime juice and brown sugar in a medium bowl. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for 10 to 15 minutes, tossing occasionally. Drain well, reserving marinade.

Heat oil in a large nonstick skillet over medium-high heat. Add shrimp and cook, turning once, until barely pink, about 30 seconds per side; transfer to a plate. Add tomato and spinach to the pan; cook, stirring, until the spinach starts to wilt, about 30 seconds. Add the reserved marinade; simmer until the sauce thickens slightly, about 2 minutes. Return the shrimp and any accumulated juices to the pan; heat through. Serve immediately.

Cooking Tips:
Freeze any leftover coconut milk or refrigerate it for several days; you can use it instead of broth or water to cook rice or enrich a curry or rice pudding.
Cooking with frozen shrimp: Individually quick-frozen shrimp, sold in resealable bags, are convenient to keep in your freezer. Thaw in a covered bowl in the refrigerator. If you're in a hurry, place shrimp in a colander under cold running water for about 5 minutes.

This is a great seafood main dish at only 176 calories per serving! I hope you’ll try this and many other recipes at the American Heart Association website. Enjoy!

Heart Health is a Family Affair


In 2007 my father was diagnosed with a heart disease called Atrial Fribrillation, in which the heart beats rapidly and erratically. At the time I was so young that I didn’t understand what was happening or
why my dad was in the hospital so often. But, through time my family realized the root cause of his heart disease was the way our family was living our every day lives. We all ate unhealthy and hardly
exercised. My parents were overweight and my father was a smoker for 35 years.

So, we decided to make a change.

We all began to exercise, eat healthier, lost weight, and my father quit smoking. Over the years my father’s condition, as well as the overall health of our family, has improved tremendously. With the help
of the American Heart Association my family was given the direction and support we needed to make this change.

Over the years, I have become deeply involved within this organization and it has grown very close to my heart. The mission set forth by the American Heart Association is simple, “To build healthier lives, free
of cardiovascular diseases and stroke.” That single purpose drives all that we do and the need for our work is beyond question. I’m honored to say I have been part of this organization and had the opportunity
to work side by side with the American Heart Association staff on some of the largest events in this organization.

With this said, I encourage you to make the decision. It starts with that. Decide to make the change. Know your family, access your environment, and DECIDE to make the change.

Queen of Hearts

The Queen of Hearts Gala is the American Heart Association’s longest running event! The late Mr. and Mrs. Buddy Crump developed the concept in 1964, which began as a community service project within the Tri-Cities area in Tennessee. Today the event has evolved into a prestigious honor and has raised over $2.25 million dollars!

The event commenced with a reception hour, prior to a very nice buffet dinner, a short program was hosted by the beautiful Amy Lynn from News Channel 11 (who happens to be another Minnesota girl!), Whitney Allen-Carr shared some remarks, I was asked to make some comments, along with the daughter of the Crumps. Finally, the “Queen of Hearts” was named and then the music & dancing began. It was a fun evening and the ladies looked fabulous with their handsome escorts!

Most impressive, these lovely young ladies who competed for the “Queen of Hearts” collectively raised $62,500 for the AHA! Thank you to Whitney, Lauren, and Pam for allowing me to participate in this wonderful tradition.

Breathtakingly Beautiful Geneva, Switzerland!

Joseph and I agree, the train system in Europe is a fabulous way to travel and most importantly an amazing way to take in some pretty spectacular views! Check out a couple shots I took as our train carried us toward beautiful Geneva, Switzerland!



Since the sun had not yet set when we arrived, we decided to quickly unpack in our fantastic room at the elegant Beau Rivage Hotel, and then walk out the front entrance for a stroll along the promenade on the shores of Lake Geneva. The energy and sophistication we felt as we explored the city was something Joe and I both commented on immediately. It was the way in which people dressed, in a rather tailored and classic style, as well as, the languages being spoken all around us. French seemed prominent, however, I believe there are four different languages used frequently in this city.

The other obvious indications of sophistication and wealth are the displays of the world finest watches in windows in every direction, the presence of Mont Blanc both in the distance and as a brand, and the vast array of exotic automobiles, including; Bentley, Rolls-Royce, Maserati, Ferrari, Audi, Aston Martin, Mercedes, Land Rover, Lamborghini, Pagani, and Bugatti. Again, my husband was enjoying himself as there was a seemingly endless parade of luxury cars everywhere we looked.

After the sun set, we enjoyed dinner at a Tex-Mex Restaurant and turned in for a good night's rest. The following morning we made our way to a towering structure, which is home to the World Heart Federation for an opportunity to meet with the staff and to share with them the affiliation we enjoy between the "Go Red for Women" campaign and the International Pageant System.

We were greeted by Heidi Lake, introduced to the staff by Johanna Raiston- CEO, and made to feel welcome by all. I addressed the group by first explaining to them the foundation of the International pageant, then elaborated on the alliance we share and the mutual benefits to their organization, as well as, the women who participate in the International pageants around the world (not to mention those who benefit from the message itself). As I launched into the type and variety of events in which I have volunteered on behalf of the AHA, often along side other titleholders within our system, the group seemed collectively engaged and encouraged. Fortunately, I was able to bring a flash drive and moved through photographs of related events as I spoke. When I was finished we took photographs and several staff members stayed on for further discussion.

It was an honor to meet the staff of the World Heart Federation! 

The weather was so incredible, Joe and I decided to walk back to Beau Rivage along the river L'Arve and Le Rhone. One of our favorite sights was that of the Hans Wilsdorf Bridge. The elliptical steel truss design is often referred to as the "bird's nest," and the structure is named after the founder of Rolex Watches and funded through the Rolex Foundation.

After a lovely lunch at a sidewalk cafe, we boarded a Swissboat and toured Lake Geneva. I could write about the tour highlights for hours, but instead will simply share the photos of some of the most breathtaking scenery in the world!

Before leaving Switzerland it was an absolute must...to enjoy a Swiss Chocolate Fondue...and we did! Oh my goodness, we found a most authentic and charming spot in the heart of Geneva, with a painted ceiling and a fondue to remember!

Osseo Junior High Goes Red!!

I was asked by a dear friend, Laura Ringen to accompany her during our local Junior High “Red Out”. With Laura by my side and our fabulously funny American Heart Association Representative, Shannon, we painted the school red… metaphorically of course.


Laura is a big supporter of Go Red and as the school activities and administrative coordinator, she worked diligently to put together a week of Heart Health for the middle school kids.  “Rock the Beat” T-shirts were sold to almost every student, lollipops were being sold to raise funds, they had a rockin’ DJ playing the hottest tunes in the cafeteria during lunch to get the kids excited about their Heart Health!



I helped sell t-shirts and encouraged students to spin the “wheel of - heart health – fortune” where the students had to answer heart health questions or do exercise to win a prize. These kids really knew their stuff. I was very impressed they knew almost every answer on the wheel!


Laura Ringen’s Osseo cheer squad accompanied us during lunch to help raise awareness and excitement about the “Rock the Beat” program. They were most excited about the American Heart Association Basketball Tournament that was taking place after school. 

I am so thankful Laura invited me to represent Go Red at a school where I grew up.  It makes me proud to know my fellow Osseo students are being well educated about the risks and prevention of heart disease.  And as always, it was an honor to represent the American Heart Association and share my heart story with the Osseo students.

Heart on the Hill

Advocacy can be a very important part of supporting a cause, and for the American Heart Association it was my pleasure to join many such supporters at the Minnesota State Capitol for Heart on the Hill! Training occurred in the morning, and the afternoon brought opportunities for constituents to meet with their respective legislators to share the key points of interest benefiting the need for a healthy community.

My first stop was in the Capitol Rotunda where I met with one of favorite heart health advocates, who happened to be one of my Mrs. Minnesota International judges, and he is a State Representative Mr. Nick Zerwas. Before departing the rotunda, I also had a chance to visit with State Representative Dean Urdahl and several citizens touring the building.

A group photo was taken, and then we were off to our individual appointments. State Representative Raymond Dehn was kind enough to give several of us his time and attention. His willingness to support our efforts was appreciated. Interestingly enough, as we piled into the elevator to head toward our next meeting with State Senator Bobby Champion, he walked into the elevator and I promptly introduced myself as a constituent who has voted for him through three elections. Needless to say, we shared an extended meeting and had a very nice exchange of information.

Thank you to everyone involved in making Heart on the Hill a successful day, and a special thanks to those who were willing sit down and listen.
